With a fascinating legacy spanning two millennia, the Château Calissanne estate is a special and sacred place. Their five south-facing olive groves overlook Montagne Sainte Victoire in the warm and dry terroir of the foothills of Lançon-Provence. Set within sixty hectares, Château Calissanne’s AOC Aix-en-Provence olive trees are planted in limestone scree soils in traditional, well-spaced plantations. They plant only 100 trees per hectare (the average in France is 350), which allows each tree room to breathe and helps increase soil vitality. Each plantation is a mix of Château Calissanne’s multi-award-winning signature blend of olive varieties: Aglandau, Salonenque, Pitchouline (10%), Grossanne, and Calcutière.
Château Calissanne use HVE ('Haute Valeur Environnementale') accredited agricultural techniques, which are compliance-checked by Bureau Véritas. These time-honoured farming methods encourage pollination and help preserve the land. Château Calissanne harvests their olives between mid-October and mid-December using a traditional “combing” method, where pickers use combs to collect optimally ripe fruit, which is caught in nets. Each picker collects 400-800 kilos of olives per day and it takes 5 kilos of olives to make 1 litre of oil.
Château Calissanne offers two signature styles for you to discover: Fruité Vert and Olive Maturé. Their Fruité Vert oil is vibrant and fresh tasting, with hints of artichoke and green apple. Olives are picked and pressed within 24 hours to avoid oxidisation and to retain their natural fruitiness. Their Fruité Vert oil is summery, herbaceous and aromatic, with only a hint of pepperiness. If you prefer a deeper, more intense flavour profile, try Château Calissanne’s Olive Maturé. The crop is harvested late and stored for 4-5 days at 30°C in dark, airtight conditions. This fermentation creates an earthy flavour, with aromas of truffle and walnuts.
Château Calissanne’s five olive groves produce oil in three selections: Les Merveilles, Font de Leu and Sainte Modeste. They have won many gold, silver and bronze awards, including AVPA World Oils International Competition, Olive Japan, Berlin Global Olive Oil Awards, Concours des Huiles d’Olive de France en Apellation d’Origine Protégée, and Concours Général Agricoles.
